Is it possible to display Analyses grouped by Analysis Category (ie how Bika used to)?

Hi,
In Bika, analyses would be grouped by categories (highlighted) when viewing an Analysis Request

In Senaite, it seems they are all just displayed in an alphabetical list - is there a setting I can make use of to group the Analyses like the way it was in Bika?

Yes, just enable the “Categorize sample analyses” in the setup to do so:
